Ecological fruit vinegar (from soft fruits)
The technology of two-phase method of production of fruit vinegar is prepared by IBPRS-PIB using microbial collection of the Institute. It is a technology with low energy demand and allows to produce vinegar from raw and pasteurized juice with different levels of sugar of high biological value. Fruit vinegar contains many compounds with proven health-promoting properties: acetic acid, citric acid, lactic acid, succinic acid, malic acid, enzymes, pectins and antioxidant phenolic compounds (gallic acid, caffeic acid, chlorogenic acid, catechins, epicatechins). In addition, it contains components necessary in all life processes, such as: amino acids, mineral elements (iron, fluorine, potassium, calcium, copper, magnesium, sodium, phosphorus, sulfur, silicon) and vitamins: A1, B1, B2, B6, C, E, P or provitamin beta-carotene. The product can be characterized as minimally processed food with rich pro-health properties.
Fruit wine vinegar and cider
Our bio wine vinegars are made from organic fruit obtained from crops growing in the cleanest region of the country.
Wine vinegar is semi-sweet, its taste resembles balsamic vinegar. Vinegar has an intense aromatic flavour and is ideal as an addition to meat-based dishes as well as sauces, salads and marinades. It can also be drunk after 1:1 dilution with water. Vinegars are unfiltered and unpasteurized. They contain live bacterial cultures and lactic acid. Consumed daily, they improve the condition of the digestive tract and increase the body’s immunity. As a result of cooperation with the Institute of Agricultural and Food Biotechnology, the value, strength and aroma of fruits are preserved and enriched with the properties of selected yeast and lactic acid.
Our bio wine vinegar is naturally cloudy, obtained by natural fermentation of wine, without any additives, containing strains of microorganisms from the collection of the Institute of Agricultural and Food Biotechnology.
