On 8-9th April, Anna Szafrańska, Ph.D., Head of the Department of Grain Processing and Bakery at Instytut Biotechnologii Przemysłu Rolno-Spożywczego – PIB, participated in a meeting organized as part of the COST Action CA21149 project – ‘Reducing Acrylamide Exposure of Consumers by a Cereals Supply-chain Approach Targeting Asparagine’. The meeting was hosted by the Faculty of Food Technology and Biotechnology in Zagreb.
Nearly 50 participants present at the event discussed the current situation regarding the EU legal regulations on food acrylamide and talked about the factors affecting the level of acrylamide in food. The meeting was an opportunity to discuss the reduction of acrylamide in food by a diverse group of stakeholders, including representatives of cereal breeders, farmers, grain processing companies, bakery companies, scientific units and others.
