At the end of August, our researchers from the Department of Meat and Fat Technology – Piotr Szymański, Ph.D. (Head of the Department) and Anna Okoń, Ph.D., participated in the international congress ‘ICoMST2024: 70th International Congress of Meat Science and Technology’, which was held in Foz do Iguassu, Brazil.
ICoMST is the most important conference devoted to agriculture, where the latest R&D on slaughter animal breeding, meat extraction and processing is presented. It is organized once a year by a pre-selected country.
This year, the ICoMST conference was attended by over 600 people – delegates from all over the world, representatives of science, industry, governmental and non-governmental organizations. The meeting allowed for the exchange of experiences, learning about research topics carried out by other scientific institutions worldwide and establishing cooperation with foreign partners.
The congress included 14 thematic sessions, over 37 lectures and poster sessions. IBPRS-PIB representatives demonstrated the results of the research project implemented under a state subsidy entitled ‘Development of technology and standards for the production of meat products with reduced sodium nitrite for small processing’.
